Apple Focaccia

Ingredients

    Dough

  • 1 apple, cored and quartered
  • 2 cups unbleached white flour, plus about 2 tbsp for kneading
  • 1/4 tsp cinnamon
  • 1 tbsp Sugar or 2 t honey
  • 1 tsp quick-rising yeast
  • 1/4 tsp salt
  • 1/3 to 1/2 cup hot tap water
  • 1/3 cup raisins

    Filling

  • 4 medium apples
  • Juice of 1/2 lemon
  • Pinch white pepper
  • Pinch cloves
  • Pinch cardamon
  • Pinch nutmeg
  • Pinch ground ginger
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/4 brown sugar
  • 2 tsp cornstarch

    Glaze

  • 2 tbsp apricot jam
  • 1 tsp water

Directions

    Dough:

  1. Process quartered apple in food processor for about 20 seconds. Transfer to a separate bowl.
  2. Add 2 cups flour, cinnamion, honey, yeast and salt (if desired) to food processor; process 5-10 seconds. Add the processed apple and process for additional 5 seconds. With food processor running, gradually add 1/3 cup hot water. Stop machine and let dough rest for half a minute. Continue processing and adding water gradually through feeder tube until dough forms a soft ball and the sides of bowl are clean.
  3. Sprinkle raisins and 1 tbsp flour onto a clean surface or wood board. Turn dough onto this floured surface and knead for about 1 minute to incorporate the raisins. Add more flour if dough is very sticky.
  4. Lightly flour the inside of a large bowl. Place the dough in the bowl and wrap with plastic wrap. Let rest for about 20 minutes in a warm, dark place.
  5. Roll dough into a circle about 14-inches in diameter. Lay in an oiled skillet or a baking dish. Cover with a kitchen towel and set aside in a warm place while you prepare filling. Preheat oven to 400 degrees F.

    Filling:

  6. Core and slice apples very thin. Sprinkle lemon juice over apple slices. Add remaining filling ingredients and mix well.
  7. Spoon filling into dough. Bake for 20 minutes, then rotate pan 180 degrees. Reduce oven temperature to 375 degrees F, and bake for an additional 20 minutes, or until apples are browned. Cool in pan for 5 minutes. Remove from the pan and cool thoroughly on a wire rack.

    Glaze:

  8. In a small saucepan, melt the apricot jam.
  9. Add water and bring to a boil, stirring vigorously. Brush this glaze over apples and serve.
