Corn Relish Salad

Makes: 2-1/2 cups (5 servings)


  • One 10-ounce package frozen whole-kernel corn, thawed, or 2 cups fresh corn kernels
  • 1 cup diced red or orange bell pepper
  • 3 green onions with green tops, sliced
  • 1/3 cup chopped fresh cilantro
  • 2 tablespoons fresh lime or lemon juice
  • 2 tablespoons olive oil
  • 1/4 to 1/2 teaspoon hot pepper sauce, as desired
  • 1/4 teaspoon salt
  • 5 large red leaf lettuce leaves


  1. Combine the corn, bell pepper, onions and cilantro in a medium bowl. In another bowl, whisk together the lime juice, oil, pepper sauce, and salt; pour over the corn mixture. Toss well, cover, and chill at least 1 hour for flavors to blend. Serve on lettuce leaves.
