Ham and Split Pea Soup

  1. In a large saucepan, combine first 7 ingredients. Simmer, covered, for one hour.
  2. Stir in celery and carrots. Continue simmering covered for another 1/2 hour to 1 hour or until peas are tender and soup thickens. Remove peppercorns and ham shank; cut meat from bone and return to the soup. Heat through and serve hot.
