Lemon Chicken Rice

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, cut into strips
  • 1 clove garlic, crushed
  • 1 cup uncooked rice*
  • 1 (14-1/2-ounce) can chicken broth
  • 1 tablespoon grated lemon peel
  • 1/2 teaspoon ground black pepper


  1. Heat oil in large skillet over medium-high heat until hot. Add chicken and garlic; cook and stir until browned. Stir in rice and broth. Cover and cook 15 minutes or until liquid is absorbed. Stir in lemon peel and pepper. Serve immediately.

    * Recipe based on regular-milled long grain white rice.
