Carmelized Carnitas

Ingredients

  • 1-1/2 lbs pork shoulder; boneless; cut in 1" cubes
  • 2 T brown sugar; packed
  • 1 T tequila
  • 1 T molasses
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic; minced
  • 1/3 cup water
  • 1 green onion, chopped

Directions

  1. Place pork cubes in single layer in 10-inch skillet. Top with remaining ingredients, except green onion.
  2. Heat to boiling; reduce heat. Simmer uncovered, stirring occasionally until the water has evaporated and the pork is slightly carmelized, about 35 minutes.
  3. Sprinkle with green onion and serve with wooden picks.
