Baked Lamb Loin

Ingredients
- 1.5 kg of boned lamb loin
- 50 g of Tuscan olive oil
- Celery stem
- Carrots
- Onion
- Garlic
- Rosemary
- White vinegar

Directions
- Brown the loin with oil, then put it in the oven already heated at 250°C; after a few minutes add the diced vegetables and the spices and continue cooking.
- After about 10 minutes sray some vinegar drops, leave it evaporate and continue cooking for another 10 min.
- Cut alternatively a slice with bone and 2 without.
