Ingredients

  • 1.5 kg of boned lamb loin
  • 50 g of Tuscan olive oil
  • Celery stem
  • Carrots
  • Onion
  • Garlic
  • Rosemary
  • White vinegar

Directions

  1. Brown the loin with oil, then put it in the oven already heated at 250°C; after a few minutes add the diced vegetables and the spices and continue cooking.
  2. After about 10 minutes sray some vinegar drops, leave it evaporate and continue cooking for another 10 min.
  3. Cut alternatively a slice with bone and 2 without.
