Farm-Fresh Peach Crumb Pie

Ingredients
Pie Filling:
- 3 tbsp all-purpose flour
- 1/3 cup granulated sugar
- 1/2 tsp ground cinnamon
- 4 cups fresh peaches, peeled and sliced
- 1 8-inch pie crust shell
Pie Topping:
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/3 cup rolled oats
- 2 tbsp butter, softened

Directions
- Preheat oven, with a baking sheet on a middle rack, to 375 degrees F.
- In a large bowl, using the pie filling ingredients only, combine flour, sugar and cinnamon; stir in peaches and toss to coat well. Pour mixture into pie crust.
- In a small bowl, using the pie topping ingredients only, combine brown sugar, flour and rolled oats. Cut in butter until crumbly. Sprinkle topping over pie.
- Place pie on top of the preheated baking sheet and bake for 40 minutes, or until golden brown.
- Remove from oven and let stand for 10 minutes. Serve warm as is or with a small scoop of vanilla ice cream on top.
