Lilikoi-Ginger Sweet and Sour Black Sea Bass

The Hawaiian name for black sea bass is hapu'upu'u. It is very popular with the Chinese population. Lilikoi is the Hawaiian word for passion fruit.

Ingredients

  • 1 cup rice wine
  • 1/2 cup chopped fresh basil
  • 2 teaspoons minced fresh red chili pepper
  • Juice of 2 lemons
  • Salt
  • 1-1/2 pounds black sea bass fillets, cut in 3-inch strips
  • Oil for deep-frying
  • 1-1/2 cups all-purpose flour

    Lilikoi-Ginger Sauce Ingredients

  • 3 tablespoons vegetable oil
  • 1/2 large onion, chopped
  • 1 teaspoon minced garlic
  • 1/2 green bell pepper, diced
  • 3 tablespoons minced fresh ginger
  • 2 teaspoons rice wine
  • 1/3 cup chicken stock
  • 1 cup passion fruit (lilikoi) juice
  • 2 teaspoons fish sauce
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons cornstarch

Directions

  1. Combine the rice wine, basil, chili pepper, lemon juice, and salt in a non-reactive dish. Add the fish fillets and marinate for at least 20 minutes. Drain.
  2. Heat the oil in a deep saucepan to 375 degrees F. Dredge the fish in the flour and deep-fry until golden, about 4 minutes. Keep warm.
  3. In a medium saucepan, heat the oil over medium heat and saute the onion and garlic until translucent. Add the bell peppers and saute for 1 minute, taking care that they do not take on any color. Add the ginger and wine and let reduce for about 1 minute. Add the stock and passion fruit juice, bring to a boil, and let simmer for about 2 minutes. Add the fish sauce and soy sauce.
  4. Mix the cornstarch with some cold water. Add to the sauce mixture and let simmer for about 2 minutes, until the sauce thickens and coats the back of a spoon. Serve over the sea bass.
