Classic Crab Louie

Ingredients

  • 1 pound crab meat
  • 1/2 pound crab legs
  • 6 cups salad greens, shredded (or torn into bite-sized pieces)
  • 1 cup "lite" mayonnaise
  • 1/4 cup chili sauce
  • 2 tablespoons green pepper, finely chopped
  • 2 tablespoons onion, finely chopped
  • 2 tablespoons Parsley, finely chopped
  • 1/4 teaspoons cayenne pepper
  • 2 hard-cooked eggs, quartered
  • 2 tomatoes. quartered
  • Parsley Sprigs
  • Lemon wedges

Directions

  1. Line salad plates or bowls with salad greens and mound crab meat on greens. Combine mayonnaise, chili sauce, green pepper, onion, parsley and cayenne. Pour sauce over crab meat. Garnish plates with crab legs, eggs, tomatoes, olives, parsley and lemon wedges.
