Island-Style Rice and Beans

A spicy side dish for a Caribbean feast.

Ingredients

  • 1 (16-oz.) can kidney beans, drained
  • 3 cups water
  • 1 (16-oz.) can coconut milk
  • 2 cups rice
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon crushed dried thyme
  • 1/2 teaspoon hot pepper sauce

Directions

  1. In large saucepan, combine all ingredients and bring to boil; reduce heat and simmer for 20-25 minutes, until all liquid is absorbed. Stir well and serve hot.
