Ingredients

  • 2-1/2 cups egg custard
  • 1 jam Swiss roll (jelly roll)
  • 4 tablespoons Kiddush (port-type) wine
  • 2/3 cup heavy cream
  • 4 tbsp fruity syrup from any canned fruit

Directions

  1. Slice the Swiss roll 1/2 inch thick and use to line the bottom of a glass bowl. Sprinkle with the wine.
  2. Pour the custard over the cake and leave to cool.
  3. Whisk the cream until it starts to thicken, then add the fruit syrup gradually, whisking again until thick.
  4. Fold the fruit syrup into the cream mixture over the top. Freeze for 1 hour to chill thoroughly, or leave in the coldest part of the refrigerator overnight.
