Classic Mint Tabouli Salad

Ingredients

  • 1 cup fine bulgur, washed
  • 2 cups chopped fresh parsley
  • 1 cup chopped scallions
  • 1/2 cup fresh mint, chopped
  • 1/2 cup lemon juice
  • 1 tsp allspice
  • Pinch salt
  • 1/2 tsp pepper
  • 1/2 cup olive oil
  • 6 tomatoes, cut into small pieces
  • Lemon slices, for garnish
  • 1 head Romaine lettuce, washed, broken up

Directions

  1. Soak bulgur in cold water for 3 hours
  2. Drain bulgur; mix with remaining ingredients, except for lemon slices and Romaine lettuce.
  3. Arrange lettuce on a large salad platter. Scoop tabouli salad into the center of the platter, on top of the lettuce. Garnish with lemon slices and serve.
