Ingredients

  • 1 tbsp olive oil
  • 1 onion, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 garlic cloves, crushed
  • 2 cups diced tomatoes
  • 2 15oz cans cup red kidney beans, drained
  • 1 cup cooked whole green lentils
  • 1 tsp paprika
  • 1 tbsp chili powder
  • Salt and pepper
  • Pinch of sugar

Directions

  1. Heat the oil in a large saucepan and saute the onion and pepper for 10 minutes. Add the garlic and cook for 1-2 minutes, then add the tomatoes.
  2. Drain the beans and lentils, reserving the liquid. Add both to the tomato mixture, along with the paprika and chili powder.
  3. Simmer for 15 minutes, adding the bean water as needed for consistency. Season with salt, pepper, and sugar. Garnish with fresh parsley and serve.
