Roasted Red Pepper, Herb and Pineapple Sandwich

  • 1/2 cup mayonnaise
  • 1/4 teaspoon fresh parsley, chopped
  • 1/8 teaspoon dried dill weed
  • 10 slices whole wheat bread
  • 5 slices Havarti or Monterey jack cheese
  • 5 DOLE Butter or Iceberg Lettuce leaves
  • 1 cup sliced cucumber
  • 1 cup packed alfafa sprouts
  • 1 cup bottled roasted red peppers, drained
  • 1 can (20 oz.) DOLE Pineapple Slices, drained


  1. Combine mayonnaise, parsley, and dill in small bowl.

  2. Spread mayonnaise mixture evenly over bread slices. Layer cheese, lettuce, cucumber, sprouts, roasted peppers and pineapple slices over 5 bread slices. Top with remaining bread
