Scrambled Eggs with Cream Cheese and Scallions

This recipe can be doubled.


  • 1 tbsp scallions, finely chopped
  • 1 tbsp butter, unsalted
  • 4 large eggs
  • 2 ounces cream cheese, cut into small pieces and softened
  • Salt
  • Freshly ground black pepper


  1. In a non-stick skillet, saute the scallions in the butter over medium-low heat until they are soft.
  2. In a bowl, whisk together the eggs, cream cheese, salt and black pepper (to taste).
  3. Pour the egg mixture into the skillet and cook over medium heat, stirring occasionally, for 3 to 4 minutes, or until it is cooked through. Serve immediately.
