Speedy Chive Potatoes

Makes: 2 cups (4 Servings)


  • 1-1/3 cups instant mashed potato flakes
  • 1/2 cup low-fat (1 percent fat) buttermilk
  • 2 tablespoons chopped fresh chives, OR finely chopped green onion tops
  • 1/4 teaspoon freshly ground pepper


  1. Bring 1 cup water to a boil in a small saucepan. Stir in the remaining ingredients; remove from the heat. Cover and let stand 2 minutes; stir with a fork.
