Tuna Pate

“Yield: About 3/4 cup, or 12 tablespoons – Difficulty Level: 2

Ingredients

  • One 6-ounce can albacore tuna packed in water, drained
  • 1 tablespoon capers, drained
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon anchovy paste
  • 1 teaspoon minced roasted garlic
  • 2 tablespoons skim-milk ricotta cheese

Directions

  1. Combine the tuna, capers, lemon juice, anchovy paste, garlic, and ricotta in the bowl of a food processor or blender and puree until smooth.
  2. Serve on celery, bread, crackers or crostini.
